Carrot & Spinach Rice:
Ingredients:
Grated Carrot 1 cup
Spinach 1 ½ cups (finely chopped)
Basmati Rice 2 cups
Green chillies optional
Ginger & Garlic paste 1/2 tsp
Bay leaves 2
Cinnamon stick 1 inch
Green cardamom 2
Cloves 3
Oil 1 tbsp
Garam masala Powder ½ tsp
Salt to taste
Method:
Take oil in a saucepan. When oil is hot add the cloves, cinnamon, bay leaves, green chillies & Ginger garlic paste
Then add grated carrot & spinach. Add the garam masala & salt to it.
Let it cook for 5 minutes
Add water into it, when water is boiling add basmati rice and cook till rice is done.
It can be served with Raitha: take two cups yogurt; add finely chopped cucumber & onion. Mix well with salt & little bit of Cumin powder and garnish with coriander leaves.
Note:
Soak Basmati rice for half an hour for best results. Rice takes 1:2 water.
Egg Fried Rice:
Ingredients:
Eggs large 2
Carrot 1
Ginger/Garlic Paste ½ teaspoon
Dark Soya Sauce 1 tea spoon
Cooked Rice 2 cups
Oil 1 tablespoon
Salt to taste
Method:
Beat the eggs with Soya sauce and keep it aside
Heat the wok and add the oil when oil is very hot add ginger garlic paste and grated Carrot
Let it fry for 1 minute and add the egg mixture slowly with continuous stirring and make sure no lumps formed.
Then add the cooked Rice a little at time and let it fry for 5 minutes and Season with salt.
There you go yummy Fried Rice is ready.
Note: For best taste ever try using Groundnut oil.
Finally if you don’t have Wok not to worry make in any saucepan.
Coconut Rice:
Ingredients:
Basmati Rice 1 cup
Ghee 1tbsp
Cumin seeds 1 tsp
Bay leaves 2
Cloves 3-4
Cinnamon stick 1/2inch stick
Cashew nuts 15-20
Coconut milk 1 cup
Water 3/4 cup
Salt to taste
Method:
Heat clarified butter in a saucepan.
Add all other ingredients except the coconut milk and water.
Fry them 2-3 minutes then add coconut milk and water
Let it boil and put the washed rice and cook till it is soft
Vegetable Biryani:
Ingredients
1 cup chopped Vegetables (You can select vegetables you like, Potatoes, beans, peas, carrots) preferably in equal quantities. 2 cups Basmati Rice
2 tbsp oil
1/2 tsp Ginger Garlic paste. One large onion cut lengthwise. 1/2 tsp Garam Masala Powder Salt as desired 3 cups Water 2 Bay leaves, 2 cardamom, 4 cloves, 1" cinnamon stick Coriander leaves and Fresh Mint leaves.
Method
Take a large sauce pan and put oil in it.
When the oil is hot, put the bay leaves, cardamom, cloves and cinnamon stick. Fry them for 3 minutes.
Add onion slices & Ginger Garlic paste.(If you like hot food you can add green chilli paste)
Fry them for 5 more minutes add chopped vegetables and Garam Masala.
Stir for 5 more minutes.
Add chopped corianders generously along with few mint leaves.
Add 3 cups of water, few drops of yellow colour and salt to taste.
Close the vessel and allow the liquid to boil.
When it boils add the rice, close the lid, cook it on medium flame for 10 minutes.
Then keep it on simmer for 5 more minutes.
Serve hot with curry or Raitha (Yogurt mixed with chopped vegetables).
